Here are my suggestions :

Meta-packages for everyone - Create a bunch of meta-packages avaiable at the instalation

Games - That are a bunch of cool titles Openarena, supertux, neverball, also emulators

Developer - Tools like build-essencial , ide´s , etc...

Office - Besides openoffice add also Gnomeoffice stuff (abiword, gnumeric, gnucash, etc..)

Video/audio/image editing (each one a separate meta-package)

Internet - Browsers, rss readers, p2p software, aim apps , etc..

Formats reproduction - basically gxine with the extra codecs and dvd reproduction hability (screw stupid patents and the dmca, you can MAKE a difference by bundling everything except w32codecs), also gnash

Eyecandy - Stuff like gdesklets, a bunch of extra themes, compiz extras, avant, etc...

System utilities - Hardinfo, camorama, (anything that can be used to test hardware)

Server

Misc - All the rest that doesn´t have a specific categorie


Look and feel consistency

For me the reason why Gnome is the desktop environment there is (only my opinion) is because the apps all use the native look, so there is no point in
replacing rhytmbox with amarok (just an example) if the functionality is the same and just ruins the look.

The best theme


Make a vote about the best theme combination possible (theme, windows borders, icons, splash screen and wallpaper)

Regular updated releases

Keep the latest stable release of the distribution you´re based as system base, but launch as many releases/repositories with backported software as possible.

Repositories

Just separate in two categories - Free and non-free, some ESSENTIAL non-free stuff can be contained in the DVD (like drivers and firmware) but not installed by default (just in case there is no internet connection avaiable), the rest just keep in the non-free repositories.
